What better for a warm spring or summer evening than this delicious concotion. Vietnamese noodle salad, also known as bun, is a fabulous mix of spicy, sour, crunchy, tangy and bright. Your choice of grilled protein (tofu above) is piled atop a bed of rice vermicelli, lettuce, fresh herbs, bean sprout and cucumbers. The whole dish is garnished with scallion oil, peanuts and served with a do-it-yourself bowl of fish sauce to pour over.
If that doesn’t sound vibrant enough, at Indochine diners are served with a caddy of hot sauce, chilli oil, hoisin sauce and more, to gussy up their dishes as they see fit.
